Chef’s Table & Private Dining
The Chef’s Table is a behind-the-scenes dining experience where each course is personally introduced by the chef, with the story of its ingredients, provenance and culinary intent. Sommelier-led wine pairings may be served alongside the menu for a more immersive evening.

Wine is central to the dining experience at Cashel Palace. Under the guidance of Head Sommelier Farrah Scanlan, the wine programme brings together classic regions, small producers, rare bottles and pairings designed to complement the rhythm of each menu.
Guests dining at The Bishop’s Buttery may choose from curated wine pairings, while private wine tastings are available by appointment. Tastings can be tailored around Old World and New World comparisons, preferred varietals, particular regions or a bespoke theme chosen for the occasion.
Private Whiskey Tastings
Private whiskey tastings at Cashel Palace offer an immersive introduction to one of Ireland’s most celebrated spirits. Guests are guided through a curated selection of premium whiskeys, from smooth Irish expressions to rare single malts and distinguished international labels.

Equine & Culinary Experiences
Cashel Palace is set in County Tipperary, one of Ireland’s great thoroughbred landscapes. Through selected experiences with Fethard Horse Country Experience, Coolmore Stud and local dining partners, guests can combine equine heritage with seasonal cuisine.
These experiences may include museum visits, guided tours, dining at Sadler’s Restaurant & Bar, visits to the Rock of Cashel and access to selected equine destinations, subject to availability and current package terms.
Golden Vale Food Tours
Cashel Palace’s passion for provenance extends beyond the hotel gates. Guests can explore the food and drink heritage of the Golden Vale through selected off-site experiences with local farmers, makers, distillers, beekeepers, orchards and cheesemakers.
Possible experiences may include honey and mead at Galtee Honey Farm, artisan cheese at Cashel Blue, candle-making and honey tastings at Brookfield Farm, a grain-to-glass visit at Tipperary Boutique Distillery and fruit or cider experiences at The Apple Farm.
These experiences may be booked individually or woven into a bespoke itinerary curated by the Cashel Palace concierge team.
