The Bishop’s Buttery is the Michelin-starred fine dining restaurant at Cashel Palace, a restored 1732 Palladian manor set beside the Rock of Cashel in County Tipperary. Located within the Palace’s original vaulted kitchen, the restaurant brings together historic atmosphere, warm Irish service and modern Irish cooking shaped by the rich produce of Tipperary’s Golden Vale.

Led by Director of Culinary Stephen Hayes and Head Chef Stefan McEnteer, The Bishop’s Buttery celebrates the land, the seasons and the people behind Ireland’s finest ingredients.

A Dining Room With History In Its Walls

Hidden beneath the graceful façade of Cashel Palace, The Bishop’s Buttery is one of Ireland’s most atmospheric dining rooms. Vaulted stone, original flagstones and a glowing central fireplace recall the room’s original life as the Palace kitchen, where food was prepared for archbishops, visiting nobility and honoured guests.

Today, that sense of occasion remains. The room is intimate, dramatic and quietly theatrical - a setting made for long dinners, thoughtful wines and memorable celebrations.

Wine Pairings & Cellar Experiences

Wine is central to the experience at The Bishop’s Buttery. Under the guidance of Head Sommelier Farrah Scanlan, the wine programme brings together classic regions, small producers, rare bottles and pairings designed to enhance the rhythm of each course.

Guests may choose from a selection of curated wine pairings or arrange a private wine tasting by appointment. Tastings can be designed around Old World and New World comparisons, preferred varietals, particular regions or a bespoke theme chosen for the occasion.

The Bishop’s Buttery is rooted in its surroundings. Tipperary’s rolling pastures, orchards, farms and artisan producers shape the menus throughout the year, allowing each season to set the rhythm of the kitchen.

Expect precise modern Irish cooking with classical foundations, contemporary flair and a strong sense of place. Dishes may feature Irish seafood, heritage meats, garden vegetables, orchard fruit, Irish dairy and carefully sourced local ingredients, each prepared with clarity, balance and purpose.
